=Ingredients=

1 bunch kale about 4 cups, well washed and stems removed and dried as much as possible

1/4 cup olive oil 

Juice of 1 lemon 

Kosher or coarse salt to taste

Freshly ground black pepper

1 Tbsp. honey or maple syrup

== Step 1 ==
Wash kale well and break up the kale leaves into small pieces, removing large stems into a salad bowl. (Small kids do a great job of this!!) Mix olive oil and juice of l lemon in a small bowl with 1/4 tsp coarse salt, honey or maple syrup and freshly ground black pepper. Pour over kale and mix well together with washed hands. Serves 4-6. 

Add grated carrots, slivered almonds, chopped walnuts and dried cranberries for a variation and more color!!
