Soups/cauliflower-and-cheddar soup

Ingredients
3 tbsp. butter
1 medium yellow onion, diced small
4 cups broth
5 1/2 ounces sharp white cheddar, grated
salt and pepper
1/8 tsp. cayenne pepper
Directions
Step 1
In a large pot melt butter of medium heat. Add onion, cook stirring occasionally until softened, about 8 minutes. Add cauliflower and cook until just beginning to brown, 12 minutes. Add broth and 1 cup water and bring to a boil over high heat. Reduce heat and simmer until cauliflower is very tender, 20 minutes. Transfer mixture to a large bowl.
Step 2
In batches fill blender 1/2 way and blend until smooth. Return pureed soup to bowl and add water if you want a thinner soup. Heat over medium until warmed though. Add cheese and stir until melted. Season with salt and pepper. Serve sprinkled with cayenne.
