Ingredients

1 cup corn meal

1 1/2 cups boiling water

3 tbsp. butter

1 1/4 cups whole wheat flour

1 tsp. salt

Directions

Step 1

Bring water to boil in small pan. Add 1/2 the butter. Stir in corn meal quickly, lower heat and cover, cook for 5 more minutes. Stir in remaining butter and cool. Mix flour and salt together. Stir into cooled cornmeal and kneed. Add more flour or water as needed. Divide into twelve pieces. Roll 6 or 7 inch circles, sprinkling board with cornmeal to keep from sticking. Cook on hot, ungreased griddle for 1 1/2 minutes on each side. Stack and cover with cloth.
