Dinners/Jamaican Red Beans and Rice

Ingredients

1 tbsp. light olive oil

1 large onion, finely chopped

3 garlic cloves, minced

3 cups cooked brown rice

2 cans (16 oz) adzuki red beans

1 can (15 oz) coconut milk

1/2 tsp. dried thyme

salt and pepper to taste

Directions

Step 1

Heat oil in a soup pot. Add onion and saute over medium-low heat until translucent. Add garlic and continue to saute until golden.

Step 2

Add rice, beans, coconut milk and thyme. Bring to a simmer and cover and cook over low heat until most of the coconut milk is absorbed, about 15 minutes. The mixture should moist but not liquidy. Season with salt and pepper and serve.
