Dinner/risotto with lentils

Ingredients
1/2 cup dried lentils
3/4 arborio rice
4 cups water
1 tsp. salt
2 tbsp. butter
1/2 yellow onion, chopped
black pepper
1 tbsp. olive oil
1/2 cup parmesan cheese
1/4 finely chopped fresh parsley for garnish
Directions
Step 1
Thoroughly rinse the lentils and rice removing stones and dirt.
Step 2
Place in slow cooker with water and salt.
Step 3
In a saute pan insert butter and saute onions for 10 minutes until golden brown.
Step 4
Add onions to lentils and rice and cover and cook on high for about 2 hours, or until both lentils and rice are tender. Add additional salt and pepper to taste.
Step 5
Top each serving with a drizzle of olive oin and a generous sprinkling of parmesan cheese and parsley.
