Ingredients

3/4 cup flour

1/4 cup sugar

1 tsp baking powder

1/4 tsp. salt

1/4 cup mini chocolate chips or blueberries

2 Tbsp. beaten egg

1/4 cup milk

1 Tbsp. vegetable oil

1/2 tsp. vanilla extract

Directions

Step 1

Preheat oven to 375°F. Grease or place paper liners in a mini muffin pan.

Step 2

Mix flour, sugar, baking powder, salt and chips or blueberries in large bowl.

Step 3

Combine egg, milk, vegetable oil, and vanilla extract in a small bowl.

Step 5

Pour the small bowl of liquids into the dry ingredients. Stir gently with a rubber scrapper. The mixture should be lumpy.

Step 6

Evenly fill the muffin pan, using up all of the batter. Wipe off any spills.

Step 7

Bake for 10-12 minutes or until lightly golden.
