Ingredients

4 eggs

1 cup flour

2 cups warm milk

3/4 cup sugar

2 tbsp. butter, melted

pinch of salt

1 tsp. vanilla extract

1 lb. cherries (2 cans)

Directions

Step 1

Beat the eggs lightly and gradually stir in the flour. When the mixture is smooth beat in the remaining ingredients. Preheat oven to 425 degrees. Very generously butter a large shallow baking dish and pour a thin layer of batter across the bottom. Put in oven for 2-3 minutes - just until the batter has begun to set.

Step 2

Arrange cherries in pan. Pour the remaining batter over carefully over the cherries. Reduce heat to 400 degrees and bake for 30-35 minutes. It should be golden brown and slightly puffed. Sprinkle with perfectionist sugar.
