From: American Medical Association Diabetes Cookbook

Ingredients

2 tsp. olive oil

1 yellow onion, chopped

4 cloves garlic, minced

2 tsp. Madras curry

1/2 tsp. ground cardamom

5 cups vegetable broth

3/4 cup dried red lentils

3/4 tsp. salt

3 cups coarsely chopped swiss chard or kale

1/4 cup plain yogurt

Directions

Step 1

In a large sauce pan heat oil over medium heat. Add onion and garlic and cook, stirring, until soft and fragrant, about 5 minutes. Sprinkle the curry and cardamom over the onion, stirring on minute longer.

Step 2

Add broth, lentils and salt and bring to a boil over high heat. Reduce heat to low and simmer uncovered until the lentils are tender, about 20-25 minutes.

Step 3

Stir in the swiss chard, stir 1 until the chard is tender, about 5 minutes. Ladle into individual bowls, top with yogurt, and serve.
