Ingredients

1 tsp Olive oil

1 ea Large onion, chopped

1 ea Medium celery stalk, chopped

2 ea Cloves garlic, minced

1 cup Brown lentils, rinsed

6 cup Water

14 1/2 oz Canned diced tomatoes

1/2 tsp Seasoned salt

3 tsp Herb, parsley, dried

1 ea Bay leaf

7 oz Hannaford Inspirations Baby Spinach- Chopped

1 tsp Red wine vinegar

2 ea Nature's Place precooked Spinach Chicken Sausage

Because of my fitness background, I did know a good deal about nutrition, so when I made the switch, I wasn't left without essential nutrients. Because all my nutritional needs were being met, I didn't have any cravings. The switch, therefore, was easy. On top of that, meat starts to smell bad I mean hot animal urine in a men's locker room BAD. And I used to LIKE the stuff!! That makes it a whole heck of a lot easier to not want to eat it!I went from omnivore to vegan overnight, haven't had any problems, and doctors, bless their nutritionally uneducated hearts, are always very surprised that my blood work comes back in optimal levels "despite" being vegan. Hell, veganism doesn't make you thin, either. You and your husband are overweight because you eat too much junk and you don't workout enough. Those bad habits won't magically change just because you go vegetarian, I'm sorry. I used to be 250lbs (I'm a 5'7 woman) and I was like that as an omnivore and lost weight as an omnivore. As a vegan, I'm putting on muscle and still have to ensure I maintain a good diet and exercise or I will GAIN weight. Yes, despite the stereotype that vegans are waif thin and sickly as hell, that's not the case. In fact, that avatar is a picture of my back.
