Makes: 18 small patties

From: Early Sprouts

Ingredients

1 large red bell pepper

1 onion

2 cloves garlic

3/4 cup shredded cheddar cheese

2 tsp. vegetable oil

3 eggs

8 small or 4 large whole-wheat pita pockets

22 oz. (1 ½ 15-oz cans) canned black beans or low-salt black beans

1 cup Italian breadcrumbs

Non-stick cooking spray

Ketchup for serving

Directions

Step 1

Preheat oven to broil. Spray the baking sheet generously with non-stick cooking spray.

Step 2

Wash, destem and deseed bell pepper. Cut into small pieces.

Step 3

Place vegetable oil in a skillet. Heat oil over medium heat and add onion, garlic and pepper pieces to sauté.

Step 4

In a small bowl, lightly beat eggs with a fork or whisk.

Step 5

Drain and rinse beans well with cool water. Place beans in large bowl and mash well with a potato masher or large fork.

Step 6

Add peppers, breadcrumbs, lightly beaten eggs, and cheese. Stir until evenly combined.

Step 7

Form burger mixture into 18 small patties and place them on the baking sheet. Place in oven 4-6” from flame; broil 5 minutes, flip burgers and broil an additional 5-6 minutes. Watch closely to prevent burning.

Step 8

When the burgers are done, allow to cool slightly before placing in halved or quartered pita pockets. Serve family-style with plenty of ketchup and enjoy!
