3/4 cup sugar

1/4 tsp. salt only if using unsalted butter

1/2 cup boiling water

1/4 meringue powder

1 tbsp. vanilla extract

3 1/2 cups confectioners sugar

2 cups soft butter

1/2 cup white chocolate melted and cooled slightly

Dissolve sugar and salt in boiling water and cool to room temperature.  Mix in the meringue powder.  Use a mixer to beat on slow speed for several minutes until the powder is dissolved and the mixture is foamy.  Increase speed and beat until soft peaks form.  Beat in the vanilla then the confectioners sugar.  Add soft butter a few tablespoons at time, beating well after each addition and scraping down the sides of the bowl occasionally.  Add melted white chocolate in the same way.  Color as desired.
