From: The Power of Poppy Pendle by Natasha Lowe

Ingredients

1 large organic ocean

1 1/2 sticks butter, softened

3/4 cup sugar

3 large eggs

1/4 apricot jam

1 1/3 cups flour and 2 tsp. baking powder

1/4 tsp. salt

Directions

Step 1

Preheat oven to 350 degrees.

Step 2

Using a lemon zester, grate the rinds off the orange, and squeeze out 5 tbsp. of the juice.

Step 3

Cream the butter and the sugar.

Step 4

Add the eggs, one at time, mixing well after each addition.

Step 5

Mix in the grated orange rind and the apricot jam.

Step 6

Carefully stir in the flour, baking powder, and salt. Don't overmix. Add 5 Tbsp. of orange juice.

Step 7

Butter a square pan. Pour in the cake mixture.

Step 8

Bake for about 40 minutes until the top is light golden and feels spongy when you touch it. It is nice with orange cream cheese frosting.
