Ingredients

1 15 oz. can cannellini beans, rinsed and drained

2 tbsp. olive oil

1-2 tbsp. fresh lemon juice

1 tsp. minced garlic (2 cloves)

3/4 tsp. dried mint (2 tsp fresh)

1/2 dried basil (1 1/2 tsp fresh)

1/4 cup crumbled fetta cheese

1/8 tsp. salt (or to taste)

1/8 tsp. freshly ground black pepper (or to taste)

bagget slices, crackers or sliced cucumbers

parsley leaves for garnish (optional)

Directions

Step 1

Place the beans in a bowl with the olive oil and lemon juice. With a potato masher or a fork mash into a course mixture, this is not a puree.

Step 2

Add the garlic, mint, basil, fetta cheese, salt and pepper. Mix to combine. Check for seasoning, add more salt or pepper as desired.

Step 3

Server in a bowl at room temp with bagget slices, crackers, or sliced cucumbers. For a more elegant presentation spread on bagget or cucumber slices and garnish each with a parsely leaf. Keep and remaining dip in a sealed container for up to three days.
