Ingredients

1 3/4 lbs of beets

2 cloves garlic, minced

1 tbs. olive oil

1 large russet potato, peeled and diced

3 1/2 cups vegetable broth

salt

pepper

sour cream to garnish

Directions

Step 1

Cook beets in salted water for 35-45 minutes. Drain and cool, skin and dice.

Step 2

In same pan, cook garlic and olive oil, one minute. Add potato, cook and stir for 5 minutes. Add beets and broth and bring to a boil. Simmer, covered, for 20 minutes.

Step 3

Put half of soup in blender, process, and then return to pan. Add salt and pepper to taste.

Step 4

Garnish with sour cream
