Ingredients

3/4 cup heavy cream

pinch salt

6 oz. semi or bitter sweet chocolate, chopped

3 tbsp. unsalted butter, chilled

1 tsp. vanilla extra

2 cups whipped cream

Directions

Step 1

Mix cream and salt in a small sauce pan and bring to a simmer of medium high heat.

Step 2

Place chocolate in food processor with a steal blade, with the machine running gradually add the cream and process until smooth. With the machine still running add the butter one tbsp. at a time. Add the vanilla and continue to process until smooth and thickened. Transfer to a medium bowl and refrigerate until it has the consistency of soft frosting.

Step 3

Reserve 1/2 cup whip cream for garnish. Scrape the chilled ganache into the bowl with the remaining cream. Whisk together until smooth. Spoon into glasses and dollop with whipped cream. Serve immediately.
