Ingredients

1/2 cup sifted cocoa or confectioners sugar

1/4 teaspoon cinnamon (optional)

1/2 teaspoon instant espresso powder (optional)

Directions

Step 1

Place ingredients in bowl and mix.

Step 2

Remove truffles from freezer. Roll a few at a time in powder. Serve immediately or place in air-tight container in fridge for up to one week or in freezer for up to a month.

Total Time: 3 hours, 28 minutes

Ingredients

2 cups finely chopped chocolate (dark, milk, white) (about 12 ounces)

optional decorations (coffee beans, chocolate chips, chopped nuts, candy sprinkles)

Directions

Step 1

Line a baking sheet with aluminum foil and set aside.

Step 2

Melt chocolate using double boiler over medium-low heat (3-5 minutes).

Step 3

Remove frozen truffles from freezer. Working with one truffle at a time use a bamboo skewer to pierce truffle and lower into chocolate. Make sure truffle is completely coated. Lift if up from chocolate and tap against edge to remove excess chocolate. Lower onto lined baking sheet, use a second skewer to push it off. If desired, top truffle with decoration of choice. Repeat. If melted chocolate begins to harden, put back over hot water and stir for 30 to 60 seconds.

Step 4

Let truffles set 3 hours at room temperature. Serve immediately or place in air-tight container in fridge for up to one week or in freezer for up to a month.
