Makes: 2 8-inch round layers or 1 9"x13"

Total Time: 1 hour 15 minutes

From: Fannie Farmer Cookbook

Ingredients

1 stick of butter (1/4 lb.), softened

1 1/2 cups sugar

1 cup applesauce

2 eggs

2 cups flour

1 1/2 tsp. baking soda

1/2 tsp. salt

2 tsp. cinnamon

1/2 tsp. nutmeg

1 tsp. ginger (optional)

1/2 cup raisins

1/2 cup chopped walnuts (optional, or just add more raisins)

Directions

Step 1

Preheat oven to 350F. Butter and lightly flour 2 8-inch round or 1 9x13-inch cake pan.

Step 2

Cream the butter with the sugar. Add the applesauce and blend. Beat in the eggs and mix thoroughly. Mix together the flour, baking soda, salt, cinnamon, ginger and nutmeg. Add to first mixture and beat just until mixed. Stir in the raisins and nuts. Spread in the pan(s) and bake for 25-30 minutes for the layers or 35-40 minutes for the rectangle. Test to see if a toothpick comes out clean. Cool in the pan for 5 minutes before turning out onto a rack.
