Wow! What a ride. In June I completed the USA Four Corners Tour of the USA.  12,500 miles.    I waetnd to knock off as many outstanding motorcycling roads as I could.  I discovered the BOTG on line and added it to my itinerary.  It was terrific.  What a great road.  Endless tight turns.  Great scenery and vistas.  The general area has many other scenic roads to explore.  I'm from the west coast with so many mountain roads, but nothing quite as twisty and over the top as VA 16.Blake P. Ingredients

1 lb firm tofu

1/4 cup olive oil

1/4 cup low-sodium tamari

1 clove garlic, minced

1 tbsp. balsamic vinegar

1 tbsp. lemon juice

1/2 tsp. basil

1/4 tsp. thyme

1/4 tsp. oregano

1/4 tsp. ginger

1/8 tsp. pepper

Step 1

Cut tofu in thirds horizontally and then cut into 1-inch strips.

Step 2

Mix remaining ingredients in small bowl.

Step 3

Lay tofu strips in a shallow roasting pan. Pour marinade over top. Turn strips over to coat. Cover and marinate and refrigerate for 30 minutes or more.

Step 4

Bake in preheated 350 degree oven for 30 minutes turning once.
