Ingredients
1 1/2 cups flour
1 cup cornmeal
1 tsp baking powder
1/4 tsp salt
1 tsp sugar
1/3 cup butter, softened
1/2 cup milk
1 can re-fried beans
1/2 cup shredded cheese
for a Gluten Free Alternative
Replace flour with:
1 cup oat flour
1/4 cup tapioca starch
1/4 cup potato flour
Add 1 egg
Directions
Step 1
Heat oven to 400. Combine dry ingredients. Cut in butter. Add milk. Stir and then kneed together.
Step 3
Place half the dough on a well floured surface. Roll out to 1/8 inch thick. Cut into 3 or 4 inch circles.
Step 4
Heat beans. Place 1 tsp beans in the center of every circle, and sprinkle with cheese. Fold the circles in half and seal first with fingers than with fork tines.
Step 5
Place the empanadas on an ungreased baking sheet and cook 12 minutes, until golden brown. Repeat until all dough is used.
