1 tbsp. olive oil&lt;br /&gt;

1 medium onion, chopped&lt;br /&gt;
&lt;br /&gt;
14 oz. vegetable broth&lt;br /&gt;
&lt;br /&gt;
10 oz. frozen chopped broccoli&lt;br /&gt;
&lt;br /&gt;
1/2 cup water&lt;br /&gt;
&lt;br /&gt;
1 large potato, peeled and cubed&lt;br /&gt;
&lt;br /&gt;
1/4 tsp. pepper&lt;br /&gt;
&lt;br /&gt;
1/4 tsp. salt&lt;br /&gt;
&lt;br /&gt;
1/4 tsp. thyme&lt;br /&gt;
&lt;br /&gt;
1 pinch nutmeg&lt;br /&gt;
&lt;br /&gt;
1 1/2 cups milk&lt;br /&gt;
&lt;br /&gt;
croutons, optional&lt;br /&gt;

Heat oil over medium heat in a large sauce pan.  Add onion and cook until golden, about 5 minutes.  Stir in broth, broccolli, water, potato, pepper, salt, thyme, nutmeg.  Heat to boiling.  Reduce heat to low and simmer until potato is cooked, about 15 minutes.  Cool.  Puree soup in blender.  Pour back into sauce pan.  Stir in milk and warm soup over low heat, serve with croutons if desired.&lt;/div&gt;</summary>
