1 Onion (chopped)&lt;br /&gt;
&lt;br /&gt;
8 oz. baby bella mushrooms (finely minced)&lt;br /&gt;
&lt;br /&gt;
4 Tbsp. butter&lt;br /&gt;
&lt;br /&gt;
1/4 cup flour&lt;br /&gt;
&lt;br /&gt;
sherry&lt;br /&gt;
&lt;br /&gt;
vegetable broth&lt;br /&gt;
t&lt;br /&gt;
garlic (minced)&lt;br /&gt;
&lt;br /&gt;
thyme&lt;br /&gt;
&lt;br /&gt;
paprika&lt;br /&gt;
&lt;br /&gt;
olive oil&lt;br /&gt;

In a frying pan saute onions garlic and oil until translucent.  Add mushrooms.  Saute until everything is brown and the liquid has been reduced out.  Add thyme and paprika to taste.&lt;br /&gt;

== Step 2 ==&lt;br /&gt;
Meanwhile, in a saucepan melt 4 Tbsp. of butter.  Whisk in the flour until bubbly.  Deglaze the mushrooms with sherry. Add mushroom mixture to the roux. The sauce should be thick and glossy.  Add broth or water to thin.&lt;/div&gt;</summary>
