1 tbsp. vegetable oil&lt;br /&gt;

1 onion, chopped&lt;br /&gt;
&lt;br /&gt;
1 medium leek, chopped&lt;br /&gt;
&lt;br /&gt;
1 lb. carrots, chopped&lt;br /&gt;
&lt;br /&gt;
1 granny smith apple, chopped&lt;br /&gt;
&lt;br /&gt;
3 cups broth&lt;br /&gt;
&lt;br /&gt;
Additional milk or broth as needed&lt;br /&gt;
&lt;br /&gt;
salt and pepper&lt;br /&gt;
&lt;br /&gt;
3 tbsp. minced mint, optional&lt;br /&gt;

== Step 1 ==&lt;br /&gt;
Heat oil in large pot over medium high heat.  Saute onion and leek until onion is translucent, about 4 minutes.&lt;br /&gt;
&lt;br /&gt;
== Step 2 ==&lt;br /&gt;
Mix in carrots and apple and tightly cover pot.  Reduce heat and cook until vegetables and fruit give up most of their juices, about 8-10 minutes.  Add broth.  Cover and cook until carrots are very soft, about 30 minutes.&lt;br /&gt;

Let soup sit uncovered about 20 minutes to let cool slightly.  Puree soup in a blender.  If soup is too thick, and additional broth or milk as needed. Season with salt and pepper.  Garnish with mint if desired.&lt;/div&gt;</summary>
