3 leeks (about 1/2 lb), finely chopped&lt;br /&gt;

1 med onion, finely chopped&lt;br /&gt;

2 tbsp butter&lt;br /&gt;
&lt;br /&gt;
1 lb potatoes, cubed&lt;br /&gt;
&lt;br /&gt;
5 cups vegetable stock&lt;br /&gt;
&lt;br /&gt;
salt and pepper&lt;br /&gt;
&lt;br /&gt;
nutmeg&lt;br /&gt;
&lt;br /&gt;
1/2 cup light cream&lt;br /&gt;
&lt;br /&gt;
1 tsp lemon juice&lt;br /&gt;
&lt;br /&gt;
2 tbsp fresh parsley&lt;br /&gt;

== Step 1 ==&lt;br /&gt;
Melt butter in a pot, add leeks and onions.  Cover and cook over medium heat for about 10 minutes, stirring occasionally, until soft but not browned.&lt;br /&gt;
== Step 2 ==&lt;br /&gt;
Add potatoes, stock, salt, pepper, and nutmeg.  Bring to a boil, reduce heat, cover and simmer for 10 minutes or until potatoes are soft.  &lt;br /&gt;
== Step 3 ==&lt;br /&gt;
Remove from heat and blend.  Return to pot, bring back to a boil then turn off.  Stir in lemon juice and cream.  Garnish with parsley.&lt;/div&gt;</summary>
