= Ingredients =&lt;br /&gt;
4 cups cooked brows rice&lt;br /&gt;
&lt;br /&gt;
1-2 cloves garlic, minced&lt;br /&gt;
&lt;br /&gt;
1/4 tsp ground ginger, or 1-2 tsp. chopped fresh ginger&lt;br /&gt;
&lt;br /&gt;
2 tbsp. toasted sesame oil&lt;br /&gt;
&lt;br /&gt;
1/2 cup onions, finely chopped&lt;br /&gt;
&lt;br /&gt;
1/2 cup snow peas or regular peas&lt;br /&gt;
&lt;br /&gt;
1 cup grated carrot&lt;br /&gt;
&lt;br /&gt;
1 tbsp. tamari or soy sauce, to taste&lt;br /&gt;
&lt;br /&gt;

2-3 eggs, scrambled and chopped&lt;br /&gt;

1-2 cups cooked chicken, diced&lt;br /&gt;

== Step 1 ==&lt;br /&gt;
Heat oil in large skillet and add all vegetables except peas, tofu if using, garlic and ginger. Cook while stirring, about 5 minutes, until vegetables are tender. Add chicken pieces, if desired and tamari. Add cooked brown rice and stir well. Add peas or pea pods and continue to stir to prevent sticking until heated through totally.  Added cooked chopped scrambled eggs if desired.  Garnish as desired.  Serve.&lt;/div&gt;</summary>
