1 large organic ocean&lt;br /&gt;
&lt;br /&gt;
1 1/2 sticks butter, softened&lt;br /&gt;
&lt;br /&gt;
3/4 cup sugar&lt;br /&gt;
&lt;br /&gt;
3 large eggs&lt;br /&gt;
&lt;br /&gt;
1/4 apricot jam&lt;br /&gt;
&lt;br /&gt;
1 1/3 cups flour and 2 tsp. baking powder&lt;br /&gt;
&lt;br /&gt;
1/4 tsp. salt&lt;br /&gt;
&lt;br /&gt;
=Directions=&lt;br /&gt;

Preheat oven to 350 degrees. &lt;br /&gt;
&lt;br /&gt;
== Step 2 ==&lt;br /&gt;
Using a lemon zester, grate the rinds off the orange, and squeeze out 5 tbsp. of the juice.&lt;br /&gt;
&lt;br /&gt;
== Step 3 ==&lt;br /&gt;
Cream the butter and the sugar.&lt;br /&gt;
&lt;br /&gt;
== Step 4 ==&lt;br /&gt;
Add the eggs, one at time, mixing well after each addition.&lt;br /&gt;
&lt;br /&gt;
== Step 5 ==&lt;br /&gt;
Mix in the grated orange rind and the apricot jam.&lt;br /&gt;
&lt;br /&gt;
== Step 6 ==&lt;br /&gt;
Carefully stir in the flour, baking powder, and salt.  Don't overmix. Add 5 Tbsp. of orange juice.&lt;br /&gt;
&lt;br /&gt;
== Step 7 ==&lt;br /&gt;
Butter a square pan.  Pour in the cake mixture.&lt;br /&gt;

Bake for about 40 minutes until the top is light golden and feels spongy when you touch it.  It is nice with orange cream cheese frosting.&lt;/div&gt;</summary>
