1 1/2 cups diced plumb tomatoes

1/2 cup diced orange bell pepper

1/2 cup diced yellow bell pepper

1/4 cup diced fresh fennel bulb

1/2 Tbsp. minced fresh ginger root

1 Tbsp. minced red or green hot chili peppers

1 Tbsp. sugar

2 Tbsp. fresh lime juice

1/4 cup chopped fresh cilantro

salt and pepper to taste

Mix all ingredients in ceramic bowl.  Cover and chill for at least 1 hour.  Serve cold or at room temperature.
