Ingredients

1 tbsp. olive oil

1 medium onion, chopped

14 oz. vegetable broth

10 oz. frozen chopped broccoli

1/2 cup water

1 large potato, peeled and cubed

1/4 tsp. pepper

1/4 tsp. salt

1/4 tsp. thyme

1 pinch nutmeg

1 1/2 cups milk

croutons, optional

Directions

Step 1

Heat oil over medium heat in a large sauce pan. Add onion and cook until golden, about 5 minutes. Stir in broth, broccolli, water, potato, pepper, salt, thyme, nutmeg. Heat to boiling. Reduce heat to low and simmer until potato is cooked, about 15 minutes. Cool. Puree soup in blender. Pour back into sauce pan. Stir in milk and warm soup over low heat, serve with croutons if desired.
