Ingredients

2 large plantains

oil for shallow frying

1/2 tsp chili powder

1 tsp cinnamon

hot chili sauce to serve

Directions

Step 1

Peel plantains. Cut of and throw away the ends, and cut the fruit into rounds, cutting at a slight diagonal to give larger flatter slices.

Step 2

Pour the oil into a small frying pan to a depth of about 1/2 inch. Heat the oil until it is very hot, watching it closing. Test by carefully adding a slice of plantain. It should float and oil should immediately bubble up around it.

Step 3

Fry the plantain slices in small batches or the temperature of the oil will drop. When they are golden brown remove from oil with a slotted spoon and let drain on paper towels.

Step 4

Mix the chili powder with the cinnamon. Put the plantain chips on a serving plate, sprinkle with the mixture, and serve immediately with a small bowl of hot chili sauce for dipping.
