Ingredients

2 cans black beans drained and rinsed

1 can (14.5 ounces) diced tomatoes

1 can (16 ounces) pumpkin puree

1/2 cup red onion chopped

2 cloves garlic, minced

4 tbsp. olive oil

4 cups vegetable broth

1 tbsp. cumin

1 tsp. kosher salt

1 tsp. cinnamon

1 tsp. allspice

1/2 tsp. ground pepper

3 tbsp. balsamic vinegar

baked pumpkin seeds for garnish

Directions

Step 1

Place oil garlic, red onion and seasonings in large pot.

Step 2

Cook on low-medium heat until union and garlic brown.

Step 3

Puree the beans and tomatoes with 1/2 of the vegetable broth. Add pureed ingredients and rest of broth to your pot.

Step 4

Simmer uncovered until thick (40-45 minutes). Before serving stir in balsamic vinegar an garnish with pumpkin seeds.
