Ingredients

1 tbsp. vegetable oil

1 onion, chopped

1 medium leek, chopped

1 lb. carrots, chopped

1 granny smith apple, chopped

3 cups broth

Additional milk or broth as needed

salt and pepper

3 tbsp. minced mint, optional

Directions

Step 1

Heat oil in large pot over medium high heat. Saute onion and leek until onion is translucent, about 4 minutes.

Step 2

Mix in carrots and apple and tightly cover pot. Reduce heat and cook until vegetables and fruit give up most of their juices, about 8-10 minutes. Add broth. Cover and cook until carrots are very soft, about 30 minutes.

Step 3

Let soup sit uncovered about 20 minutes to let cool slightly. Puree soup in a blender. If soup is too thick, and additional broth or milk as needed. Season with salt and pepper. Garnish with mint if desired.
