Ingredients

3 leeks (about 1/2 lb), finely chopped

1 med onion, finely chopped

2 tbsp butter

1 lb potatoes, cubed

5 cups vegetable stock

salt and pepper

nutmeg

1/2 cup light cream

1 tsp lemon juice

2 tbsp fresh parsley

Directions

Step 1

Melt butter in a pot, add leeks and onions. Cover and cook over medium heat for about 10 minutes, stirring occasionally, until soft but not browned.

Step 2

Add potatoes, stock, salt, pepper, and nutmeg. Bring to a boil, reduce heat, cover and simmer for 10 minutes or until potatoes are soft.

Step 3

Remove from heat and blend. Return to pot, bring back to a boil then turn off. Stir in lemon juice and cream. Garnish with parsley.
