For dressing, in a glass bowl whisk together vinegar, sugar, the 1 teaspoon kosher salt, and black pepper until sugar is dissolved. Let dressing stand while preparing salad.

1 cup cornmeal

1 tsp baking powder

1/4 tsp salt

1 tsp sugar

1/3 cup butter, softened

1/2 cup milk

1 can re-fried beans

1/2 cup shredded cheese

for a Gluten Free Alternative

Replace flour with:

 1 cup oat flour
 1/4 cup tapioca starch
 1/4 cup potato flour
