Ingredients

1 lb firm tofu

1/4 cup olive oil

1/4 cup low-sodium tamari

1 clove garlic, minced

1 tbsp. balsamic vinegar

1 tbsp. lemon juice

1/2 tsp. basil

1/4 tsp. thyme

1/4 tsp. oregano

1/4 tsp. ginger

1/8 tsp. pepper

Step 1

Cut tofu in thirds horizontally and then cut into 1-inch strips.

Wow! What a ride. In June I completed the USA Four Corners Tour of the USA. 12,500 miles. I waetnd to knock off as many outstanding motorcycling roads as I could. I discovered the BOTG on line and added it to my itinerary. It was terrific. What a great road. Endless tight turns. Great scenery and vistas. The general area has many other scenic roads to explore. Step 3

Lay tofu strips in a shallow roasting pan. Pour marinade over top. Turn strips over to coat. Cover and marinate and refrigerate for 30 minutes or more.

Yes I was one of the lucky ones to travel up to Marion and check out BotD with the S20oo group. I must say great roads to crsuie on. BotD has just about any kind of curve you can think of. Long straights with high speed curves at the bottom of the mountains, then super tight curves as you near top of the mountains . The valleys are very nice between the two mountain ranges. You should check this place out. The General Francis Marion Hotel gets two thumbs up for the place to stay. Great staff, food, spirits and lodging. I will be back up there again. Well worth the drive.
