Ingredients

1 1/4 cup flour

1 cup whole wheat flour

4 tsp. ground ginger

1 tsp. cinnamon

1 1/2 tsp. baking powder

1/4 tsp. allspice

1/4 tsp. salt

2 large eggs

1/3 cup vegi oil

1/4 unsweetened apple butter or apple sauce

1/2 cup packed dark-brown sugar

1/2 cup dried cranberries, pineapple or other dried fruit

Directions

Step 1

Preheat oven to 350. Spray cooking sheet with oil and set aside.

Step 2

In medium bowl mix first seven ingredients and set aside.

Step 3

Combine eggs, oil and apple butter. Add sugar and blend. Add half of dried mixture. Stir. Add remaining dried mixture and stir until soft and sticky dough forms.

Step 4

Fold in dried fruit. Divide dough in half and place on either end of cookie sheet. With damp hands form each half into logs 3 inches wide and 3/4 inch high.

Step 5

Bake 25-30 minutes or until firm to the touch. Remove from oven and cool ten minutes.

Step 6

With serrated knife slice each log into 1/2 inch cookies, cutting on diagonal. Bake 10 minutes. Turn each cookie over and bake 10 more minutes. Turn oven of and leave biscotti in oven for 10 minutes. Remove from oven and cool. Store at room temperature.
