Ingredients

3/4 cup + 1 tbsp. butter

3-1/4-3-3/4 cups confectioners sugar

1 cup peanut butter

1 tbsp. milk

1/2 tsp. vanilla

16 ounces semi-sweet chocolate chips

Directions

Step 1

Melt 3/4 cup butter in small sauce pan over low heat. Combine melted butter and confectioners sugar in medium bowl. Beat until smooth. Add peanut butter beating well until combined. Stir in milk and vanilla. Beat in enough of the remaining sugar to make a firm crumbly looking mixture but not too dry.

Step 2

Roll dough into 1-inch balls. Arrange on a lined tray and insert toothpick into the center of each ball and chill at least 30 minutes.

Step 3

Melt chocolate and remaining butter in a heavy sauce pan over low heat. Cool slightly. Dip 3/4 of the ball into the chocolate so that the ball resembles a buckeye. Place balls toolpick side-up on a tray lined with wax paper. Chill until chocolate becomes firm. Store in refridgerator.
