Ingredients
1 cup sugar
3 tbsp. molasses
1/2 cup vegetable oil
1/2 tsp. kosher salt
2 large eggs
2 1/4 cups flour
1 tsp. baking soda
2 tsp. ground ginger
1/4 tsp. cloves
1/2 tsp. cinnamon
1/2 tsp. nutmeg
3/4 cup buttermilk
1 cup packed grated peeled apples
1/2 cup dried currents, diced candied ginger, or raisins (optional)
Directions
Step 1
Preheat oven to 350 degrees. Grease a 9x13 pan. In a mixer bowl beat the sugar, molasses, oil and the salt.
Step 2
Mix in the eggs. Add flour, baking soda, and spices and mix well. Add buttermilk and mix again. Add the apples, raisins, currents or diced candied ginger if desired and mix well. Scrape into prepared pan and bake at 350 for 30 minutes or until center of cake bounced back when gently pressed. Remove cake to cooking rack for 30 minutes. When cake has cooked cut and sprinkle with confectioners sugar.
