Other/black bean dip with curried avocado

Ingredients

2 ripe but firm avocados

1 1/2 tbsp. fresh lime juice

3/4 cup salsa

1 15 oz. can black beans rinsed and drained

1/2 cup chopped green onions, white and light green parts only

1 Tbsp. chopped fresh cilantro

1 tsp. chopped garlic

1/4 tsp. salt and pepper

Directions

Step 1

Chop avocado. Place in a bowl and sprinkle with lime juice. Mash about 1/2 the mixture so it's still chunky.

Step 2

Add salsa, beans, scallions, cilantro and garlic. Stir gently to combine so the mixture stays chunky.

Step 3

Season to taste with salt and pepper.

Step 4

Refrigerate until ready to eat, serve with chips.
