Dinners/Lemon Orzo

Ingredients

2/3 cup orzo, about 4 oz.

2 tsp. olive oil

2 cloves garlic, sliced

1/2 tsp. finely chopped lemon peal, yellow part only

1/4 cup finely snipped parsley

1 tbsp. lemon juice

salt and pepper

shaved parmesan cheese or other hard cheese

Directions

Step 1

Cook orzo in lightly salted boiling water for 6-8 minutes or until al dente. Drain well.

Step 2

Heat olive oil in small skillet. Cook garlic and lemon peel for about 30 seconds, stirring often. Set aside.

Step 3

Toss orzo with garlic mixture, parsley and lemon juice. Add salt and pepper to taste. Top with cheese shavings.
