Ingredients

vegetable oil spray

2 egg whites

1/4 teaspoon cream of tartar

pinch of salt

1/2 confectioners sugar

2 cups shredded coconut

1 scant teaspoon vanilla extract

Step 1

Lightly spray two cookie sheets with oil and preheat oven 350 degrees f.

Step 2

Beat egg whites, salt, cream of tartar in large mixing bowl until stiff peaks form. Gradually add in the sugar until the mixture is stiff and shiny. Gently fold in coconut and vanilla.

Step 3

Drop mixture by spoonfuls 3 inches apart onto baking sheet. Bake 16-20 minutes or until lightly browned. Remove from oven and cool for 2 minutes on baking sheet.

Step 4

Remove to cooling racks to cool completely.
