Ingredients

Cheesecake

1 1/4 cups gluten-free cookie crumbs

1/4 cup melted butter

3 8-oz packages softened cream cheese

1 14 oz. can sweetened condensed milk

1 1/2 cups pumpkin

3 eggs

1/4 maple syrup

1 1/2 tsp. cinnamon

1/2-1 tsp. nutmeg

Sour Cream Maple Topping

1/4 cup sour cream

2 tsp. maple syrup

Directions

Step 1

Heat oven to 300. Combine crumbs and butter. Press firmly on bottom of 9 inch springform pan. Beat cream cheese until fluffy. Gradually beat in sweetened condensed milk until smooth. Add pumpkin, eggs, maple syrup, spices, mixing well. Pour into prepared pan. Bake for 60-65 minutes or until edge springs back when lightly touched.

Topping

Mix sour cream and maple syrup together. Spread on cake surface. Bake for an additional 10 minutes. Chill.
